Place the pork shoulder, celery, onion, garlic, bell pepper, & salt into a large pot. Envelop with 2 inches of water, Conduct to a boil & then turn down the heat & simmer uncovered for 1 hour. After an hour, add the chicken liver to the pot & Keep Up to cook for 45 more min or Till the pork is Kind.
Strain the meat & vegetables, Save the liquid. Finely dice the meat & vegetables with a knife, in a food processor or in a meat grinder set for a coarse grind. One Time diced, place meat & vegetables in a bowl.
Add to the bowl the cooked rice, jalapeƱos, thyme, oregano, paprika, green onions parsley, black pepper, & cayenne. Stir in 1 cup of the reserved cooking liquid & Merge until the filling is moist & a bit sticky. If it Emerge too dry, add more of the reserved liquid. Taste and adjust seasonings, if needed.
